.....just in case you needed any ideas-
Bacon Potato Casserole (with veggies)
This is sooo easy. No set recipe. You can add whatever else you like. This is what I used:
-About 5 potatoes, sliced and diced
-Handful of green beans
-handful mushrooms
-3 or more slices of bacon
-chives
-cheese for topping
Preheat oven to 350 degrees.
Slice vegetables, etc., and put aside
Fry up bacon in pan, pat grease with paper towel and set aside.
Pour prepared veggies in bacon pan with grease still in it, saute for a few minutes.
Put everything in a casserole dish.
Pour about a cup and a half of water over casserole and bake about 30 minutes, or until potatoes are soft.
Sprinkle cheese on top about halfway through baking.
Let cool when done.
That's about it. Kinda heavy, but good for fall/winter. It's yummy! Enjoy!
